Easy sheet pan quesadillas! I’m continuing my video series with Albert Lee and Frigidaire, and this time I’m bringing you a meal that’s a true dinnertime staple in my house all summer long! This dinner also doubles as a wonderful back-to-school meal when September rolls back around! They’re cheesy. They’re crunchy. They’re totally perfect!
I made these in the Frigidaire Professional Wall Oven, which has what may be my favorite feature yet on an appliance: No Preheat. Frigidaire Professional’s No Preheat feature lets you skip preheating by cooking food as the oven comes up to temperature, saving time and energy while delivering evenly cooked, crispy results for everyday recipes like these quesadillas.

Why This Sheet Pan Quesadilla Recipe Works
These sheet pan quesadillas turn a family favorite into an easy, hands-off meal that’s crispy, cheesy, and perfect for busy weeknights. Here’s why this recipe works so well:
- Simple, Family-Friendly Ingredients: Flour tortillas, shredded cheese, and seasoned chicken make these quesadillas familiar, satisfying, and easy for the whole family to love.
- Sheet Pan Convenience: Cooking 10 quesadillas at once eliminates the need to stand over the stove making them one at a time.
- Perfect Cheese-to-Chicken Ratio: Equal portions of shredded cheese and chicken give every quesadilla plenty of melty cheese and hearty filling without overstuffing the tortillas.
- Crispy on Both Sides: Flipping the quesadillas halfway through baking helps both tortillas turn evenly golden brown and crisp.
- No Preheat Option: Using the Frigidaire Professional Wall Oven’s No Preheat function lets you get dinner started immediately, saving time on busy evenings.
- Easy Shortcut with Rotisserie Chicken: Store-bought rotisserie chicken makes this recipe especially quick while still delivering plenty of flavor.
- Fresh Toppings Balance the Richness: Salsa, sour cream, cilantro, and lime add creaminess, acidity, and freshness to balance the warm cheese and savory chicken.
- Easy to Customize: Swap the chicken for another protein, add vegetables, change up the cheese, or set out different toppings so everyone can make their serving their own.

Key Ingredients for Sheet Pan Quesadillas
- Flour Tortillas – Small flour tortillas create the perfect individual-sized quesadillas and bake up golden and crisp while staying tender enough to hold the filling.
- Mexican Blend Cheese – A shredded Mexican cheese blend melts beautifully and provides the gooey, cheesy texture that makes a great quesadilla so satisfying.
- Mexican-Style Shredded Chicken – Seasoned shredded chicken adds hearty protein and savory flavor without requiring much extra prep. Rotisserie chicken is an easy shortcut that makes this dinner even faster.
- Salsa – A bright, flavorful salsa adds acidity, spice, and freshness to every bite while making an easy dipping sauce.
- Sour Cream – Cool, creamy sour cream balances the warm, savory filling and provides a smooth contrast to the crispy tortillas.
- Fresh Cilantro – Chopped cilantro adds fresh, herbaceous flavor that brightens up the rich cheese and chicken.
- Fresh Lime – A squeeze of lime just before serving adds a pop of acidity that brings all the flavors together and keeps the quesadillas tasting fresh and vibrant.

FAQs for Sheet Pan Quesadillas
Can I prep the quesadillas ahead of time?
Yes. You can shred the chicken and cheese ahead of time and keep them refrigerated until you’re ready to assemble. For the crispiest results, assemble the quesadillas just before baking so the tortillas don’t become soggy.
Can I use rotisserie chicken?
Absolutely. Rotisserie chicken is one of the easiest shortcuts for this recipe. Simply shred the cooked chicken and season it Mexican-style before adding it to the quesadillas.
Can I use corn tortillas instead of flour tortillas?
Yes, although the texture will be different. Corn tortillas tend to be smaller and a little more delicate, so handle them carefully when flipping. Warming them briefly before assembling can also make them more pliable.
How should I store and reheat leftovers?
Store leftover quesadillas in an airtight container in the refrigerator for up to 3–4 days. Reheat them in a 375-degree F oven or air fryer until warmed through and crispy again. Avoid microwaving if possible, as it can make the tortillas soft instead of crisp.
