Fall is settling in, everyone! This is the kind of soup I want simmering on the stove when the weather starts to turn. Italian Wedding Soup is hearty without being heavy, loaded with tender little beef and sausage meatballs, plenty of vegetables, short pasta, and fresh spinach, all tucked into a savory, Parmesan-rich broth. It’s simple, cozy food that somehow feels like a whole event when you bring a big steaming pot to the table.
And those meatballs! They’re packed with Parmesan, garlic, fresh herbs, and just a little Dijon, then simmered right in the broth so all that flavor becomes part of the soup. Cabbage, celery, and onion give the broth plenty of body, while the spinach goes in right at the end to keep things fresh. My favorite move is putting a good handful of grated Parmesan right in the bottom of each bowl before ladling the hot soup over the top. More Parm to finish, obviously!
This post is sponsored by Albert Lee and Frigidaire. We made this Italian Wedding Soup on the Frigidaire Gallery Induction Cooktop with MatteGuard scratch-resistant surface (minimizes visible scratching by up to five times!). I absolutely love cooking on induction. It heats incredibly quickly and responds almost instantly when you adjust the power, which is perfect for getting a big pot of soup up to a simmer and then dialing it back to that gentle, steady bubble you want for tender meatballs. Because induction heats the cookware directly, the cooktop itself also stays cooler than a traditional radiant electric surface, which means less wasted heat and spills are much easier to wipe away.

Why This Italian Wedding Soup Recipe Works
This Italian Wedding Soup is cozy, hearty, and packed with tender homemade meatballs, fresh vegetables, and pasta in a rich, savory broth. It’s a comforting, family-friendly meal that’s perfect for chilly evenings or anytime you need a satisfying bowl of homemade soup. Here’s why this recipe works so well:
- Tender, Flavorful Meatballs: A combination of ground beef and sausage creates juicy, flavorful meatballs, while Parmesan, garlic, fresh herbs, and Dijon mustard add depth to every bite.
- Simple, Wholesome Ingredients: Everyday ingredients like celery, onion, cabbage, spinach, and pasta come together to make a nourishing, satisfying meal.
- Rich, Savory Broth: Chicken broth and a little chicken base or bouillon create a deeply flavorful soup without requiring hours of simmering.
- Extra Vegetables for Heartiness: Chopped cabbage adds texture and sweetness as it softens in the broth, while fresh spinach brings color and freshness.
- One-Pot Convenience: The meatballs cook directly in the simmering broth, adding flavor to the soup while keeping cleanup simple.
- Perfectly Tender Meatballs: Allowing the meatballs to simmer undisturbed for the first five minutes helps them hold their shape and stay tender.
- Pasta Makes It a Complete Meal: Short pasta adds substance and makes every bowl filling enough to serve as a satisfying lunch or dinner.
- Parmesan in Every Bite: Adding freshly grated Parmesan to the bottom of each bowl before ladling in the hot soup creates an extra layer of cheesy, savory goodness.
- Great for Leftovers: The flavors continue to develop as the soup rests, making it a wonderful option for meal prep or enjoying throughout the week. Store extra pasta separately to keep it from soaking up too much broth.

Key Ingredients for Italian Wedding Soup
- Ground Beef and Sausage – A combination of ground beef and sausage creates tender, juicy meatballs with rich, savory flavor. The sausage adds extra seasoning and depth to every bite.
- Parmesan Cheese – Freshly grated Parmesan adds salty, nutty flavor to the meatballs and creates a deliciously savory finish when sprinkled into each bowl.
- Panko Breadcrumbs – Light, airy panko breadcrumbs help bind the meatballs while keeping them tender instead of dense or heavy.
- Fresh Parsley and Thyme – These fresh herbs bring bright, aromatic flavor to the meatballs and complement the richness of the beef and sausage.
- Dijon Mustard – Just a teaspoon of Dijon adds subtle tanginess and depth to the meatballs without overpowering the traditional Italian flavors.
- Cabbage – Chopped cabbage softens beautifully as it simmers, adding natural sweetness, texture, and extra heartiness to the soup.
- Celery and Onion – These aromatic vegetables create a flavorful foundation for the broth, adding sweetness and savory depth as they cook.
- Chicken Broth and Bouillon – Low-sodium chicken broth combined with chicken base or bouillon creates a rich, comforting broth that tastes like it has been simmering all day.
- Fresh Spinach – Tender spinach wilts quickly into the hot broth, adding beautiful color, freshness, and a boost of vegetables.
- Short Pasta – Small pasta shapes add satisfying texture and make the soup a complete, filling meal. Cooking the pasta separately helps prevent it from absorbing too much broth.

Instructions
- Prepare the Meatball Mixture: In a large mixing bowl, combine the ground beef, sausage, egg, grated Parmesan, panko breadcrumbs, Dijon mustard, chopped parsley, garlic, and fresh thyme. Mix gently until all ingredients are evenly incorporated.
- Sauté the Vegetables: Heat olive oil in a large soup pot over medium heat. Add the diced celery, chopped cabbage, diced onion, and garlic. Cook, stirring occasionally, until the vegetables begin to soften and become fragrant.
- Shape the Meatballs: While the vegetables cook, roll the meatball mixture into approximately 1-inch balls. You should have about 20–24 meatballs. Set aside until ready to add to the soup.
- Prepare the Broth: Pour the chicken broth, stock, or water into the pot with the vegetables. Add the chicken base or bouillon, season with salt and pepper to taste, and bring everything to a gentle simmer.
- Cook the Meatballs: Carefully drop the meatballs into the simmering broth one at a time. Allow them to cook undisturbed for the first 5 minutes so they hold their shape, then stir gently. Continue simmering until the meatballs are fully cooked through.
- Add the Pasta and Spinach: Stir in the cooked short pasta and fresh spinach. Allow the spinach to wilt and the pasta to warm through as the soup continues to simmer.
- Finish Simmering: Let the soup simmer for approximately 25 minutes total, allowing the vegetables to become tender, the meatballs to cook completely, and the flavors to come together. Taste and adjust the seasoning as needed.
- Finish & Serve: Place a generous sprinkle of freshly grated Parmesan cheese in the bottom of each serving bowl. Ladle the hot soup over the cheese, finish with additional Parmesan on top, and enjoy while warm.

Substitutions & Variations for Italian Wedding Soup
Here are some of my favorite substitutions and variations:
- Meatball Options: Swap the ground beef and sausage for ground turkey, ground chicken, or a combination of your favorite ground meats for a lighter version of this classic soup.
- Sausage Variations: Use mild Italian sausage for a traditional savory flavor or spicy Italian sausage to add a little heat to the broth.
- Breadcrumb Alternatives: Replace the panko breadcrumbs with traditional Italian breadcrumbs or gluten-free breadcrumbs to suit your preferences.
- Pasta Options: Swap the short pasta for acini di pepe, orzo, ditalini, small shells, or pastina. Any small pasta shape works beautifully in this soup.
- Leafy Green Substitutions: Replace the fresh spinach with chopped kale, Swiss chard, or escarole. Heartier greens may need a few extra minutes to become tender.
- Cabbage Alternatives: Swap the chopped cabbage for additional spinach, kale, or escarole if you prefer a more traditional Italian Wedding Soup.
- Add More Vegetables: Stir in diced carrots, zucchini, green beans, or peas for extra color, flavor, and nutrition.
- Broth Variations: Use homemade chicken stock for extra richness, store-bought low-sodium broth for convenience, or vegetable broth for a slightly lighter flavor.
- Make It Gluten-Free: Use gluten-free breadcrumbs in the meatballs and substitute your favorite gluten-free small pasta.
- Low-Carb Version: Skip the pasta and add extra cabbage, spinach, or zucchini for a hearty, vegetable-packed soup.
- Add Some Heat: Stir in crushed red pepper flakes, use spicy Italian sausage, or finish each bowl with a drizzle of chili oil for a little extra kick.
- Fresh Herb Variations: Add fresh basil, oregano, or additional parsley to the meatballs or broth for even more aromatic Italian flavor.
- Brighten the Broth: Finish the soup with a squeeze of fresh lemon juice or a little lemon zest to balance the richness of the meatballs and Parmesan.

FAQs for Italian Wedding Soup
Can I make Italian Wedding Soup ahead of time?
Absolutely. Italian Wedding Soup is a wonderful make-ahead meal because the flavors continue to develop as it sits. Prepare the soup as directed, but store the cooked pasta separately until you’re ready to serve. This prevents the pasta from absorbing too much broth and becoming mushy.
Can I use frozen meatballs instead of homemade?
Yes. Frozen meatballs are a great shortcut when you’re short on time. Simply add fully cooked frozen meatballs directly to the simmering broth and heat until warmed through. You can also use uncooked frozen meatballs, but be sure to simmer them until fully cooked.
What is the best pasta for Italian Wedding Soup?
Small pasta shapes like acini di pepe, orzo, ditalini, or pastina work beautifully in Italian Wedding Soup. They fit perfectly on a spoon alongside the meatballs and vegetables. Cooking the pasta separately helps keep the broth from becoming too thick.
Can I freeze Italian Wedding Soup?
Yes. This soup freezes beautifully, especially without the pasta. Allow the soup to cool completely, then transfer it to freezer-safe containers, leaving a little room for expansion. Freeze for up to 3 months for best quality. Thaw overnight in the refrigerator and add freshly cooked pasta when reheating.
How do I keep the meatballs from falling apart?
The egg, Parmesan, and panko breadcrumbs help bind the meatballs together. Mix the ingredients gently without overworking the meat, and avoid stirring the soup for the first 5 minutes after adding the meatballs. This allows them to firm up and hold their shape as they simmer.
