- 1 tablespoon dark brown sugar
- ¼ cup soy sauce
- 5 inches lemongrass peeled and minced
- 4 cloves garlic peeled and minced
- Optional: Fresh herbs or peanut sauce for serving
Preheat your grill to 350°F.
In a large mixing bowl, combine the chicken thighs, dark brown sugar, soy sauce, minced lemongrass, and garlic. Mix thoroughly to coat the chicken evenly, and let it stand at room temperature for 5 minutes.
Place the chicken thighs on the grill and cook for 15–20 minutes, turning occasionally, until the internal temperature reaches 175°F and the chicken is lightly charred and cooked through.
Remove the chicken from the grill and let it rest for a few minutes. Serve topped with fresh herbs or a drizzle of peanut sauce, if desired.
