Homemade Artisan Crackers 

Prep time 15 minutes 

Bake time 7-10 minutes 

 

2 1/4 cups flour 

1/4 cup olive oil or melted butter 

1 tablespoon everything bagel seasoning 

1 tablespoon fresh lemon thyme, chopped (This isn’t lemon zest plus thyme but an actual herb) (Rosemary also works) 

1/2 teaspoon cracked black pepper 

2 tablespoons finely grated parmesan cheese. 

1/2 cup plus 1 tablespoon water 

 

Preheat the oven to 450 degrees F. Pulse all ingredients but the water in a food processor until it begins to clump together. Add the water and pulse again until the dough can be formed into a smooth ball. 

 

On a floured surface, form the dough into a ball. Cut the ball into 4 even pieces. Cover the pieces with a towel or a bowl and allow to rest for 15 minutes. 

 

Then, roll the pieces out as flat and paper thin as you can, dusting with flour to prevent sticking, if needed. Line a baking sheet with parchment. Place the thin cracker dough onto the parchment and sprinkle lightly with flaky sea salt. 

 

Bake the cracker 5 or 6 minutes and flip until crisp and golden on each side. While the first cracker bakes, roll out the next. Remove the finished cracker from the oven and put the next one in to bake. Repeat until all crackers are baked. 

 

Allow to cool completely before breaking into pieces. May be stored up to a week in an airtight container.
