- 2 pounds 80/20 ground beef
- 2 eggs
- 1 cup panko bread crumbs
- 2 jalapeños minced
- 2 cloves garlic minced
- 1/4 cup tomato paste
- 1 cup cheddar cheese cubed or grated
- 1 teaspoon onion powder
- 1 teaspoon smoked paprika
- 1/4 cup ketchup
- Salt to taste
- Pepper to taste
Preheat oven to 350°F (175°C).
In a large mixing bowl, combine ground beef, eggs, panko, minced jalapeños, minced garlic, tomato paste, cheddar, onion powder, smoked paprika, salt, and pepper.
Gently mix using forks or your hands, being careful not to overwork the meat.
Shape mixture into a rectangle and place in a 7x9-inch baking dish (or similar, leaving room around the meat).
Spread ketchup evenly over the top and bake uncovered for 90 minutes. Longer baking can make the meat loaf even more tender.
