Hot Wings at Home 3 Ways

Ingredients
  

  • 4-5 pounds chicken wings thawed and drained
  • 2 tablespoons olive oil
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 1/2 teaspoons kosher salt adjust to taste
  • 1/2 teaspoon black pepper adjust to taste

Traditional Buffalo Sauce

  • 1/2 cup buffalo-style hot sauce
  • 1/2 cup melted butter

Spicy Soy & Sesame Sauce

  • 1/2 cup soy sauce
  • 2 tablespoons brown sugar
  • 1 tablespoon sambal chili paste or sriracha
  • 1 teaspoon sesame seeds
  • 1-2 teaspoons rice vinegar
  • 1 teaspoon toasted sesame oil

Citrus Honey Mustard Sauce

  • 1/4 cup honey
  • 1/4 cup Dijon mustard
  • Juice of 1 lemon
  • Cracked black pepper to taste

Blue Cheese Dressing

  • 1 cup mayonnaise
  • 1 cup sour cream
  • 1 teaspoon onion powder
  • 2 tablespoons white vinegar
  • 1/4 cup 2 ounces crumbled blue cheese
  • Salt and pepper to taste
  • Milk if needed for thinning

Instructions
 

Step 1: Prep the Wings

  • In a large mixing bowl, toss wings with olive oil, paprika, garlic powder, onion powder, salt, and pepper. Let them rest for 10-15 minutes while you preheat your cooking method: 375°F for air fryer, 425°F for oven.

Step 2: Cook the Wings

  • Air Fryer: Place wings in a single layer (multiple batches if needed). Cook 10 minutes, shake and flip, another 10 minutes, flip again, then final 10 minutes for golden crisp wings.
  • Oven: Arrange wings on a lined baking sheet. Bake 25-30 minutes, flip, then bake an additional 20-30 minutes until crisp and golden.

Step 3: Traditional Buffalo Sauce

  • In a saucepan, combine buffalo hot sauce and butter over medium heat. Stir until bubbling and smooth. Toss one portion of wings in this sauce.

Step 4: Spicy Soy & Sesame Sauce

  • In a small saucepan, whisk together soy sauce, brown sugar, sambal/sriracha, sesame seeds, rice vinegar, and sesame oil over medium heat until slightly thickened. Toss a second portion of wings in this sauce.

Step 5: Citrus Honey Mustard Sauce

  • In a bowl, mix honey, Dijon mustard, lemon juice, and cracked black pepper. Toss the final portion of wings in this sauce.

Step 6: Blue Cheese Dressing

  • In a medium bowl, combine mayonnaise, sour cream, onion powder, vinegar, blue cheese, salt, and pepper. Thin with milk if needed. Serve alongside the wings with celery sticks.

Step 7: Serve

  • Divide the wings by sauce onto a serving platter, serve immediately with blue cheese dressing and fresh celery.

Notes

Store cooked wings and sauces separately in airtight containers for up to 3 days. Blue cheese dressing keeps for up to 7 days in the fridge. Reheat wings in the oven or air fryer for best crispiness.
