- 8 boneless skinless chicken thighs (or 6 bone-in, skin-on thighs)
- 2 tablespoons olive oil
- 2-3 cups dry white wine
- 2 cups water
- 1 medium yellow onion sliced
- 2 cloves garlic smashed and chopped
- 2 tablespoons Dijon mustard
- 2 15-ounce cans cooked lentils, drained
- 6-8 sprigs fresh thyme
- Salt and pepper to taste
- 1/2 teaspoon chili flakes optional
