Creamy Cajun Chicken Pasta

Ingredients
  

  • 2 medium chicken breasts thinly sliced
  • 1/2 yellow onion sliced
  • 1 red bell pepper sliced
  • 1 green bell pepper sliced
  • 2 cloves garlic smashed and minced
  • 2-3 tablespoons low sodium or salt-free Cajun seasoning* see note
  • 1 teaspoon onion powder
  • 1/2 teaspoon paprika
  • 3 cups heavy cream
  • 1 cup Parmesan cheese
  • 3/4 of a 1-pound package short pasta cooked (reserve 1 cup pasta water)
  • Salt and pepper to taste

Instructions
 

  • Cook the pasta according to the package directions. While the pasta is boiling, prepare the sauce.
  • In a large skillet with tall sides, heat olive oil over medium-high heat. Add the chicken and brown quickly. Sprinkle in the Cajun seasoning, onion powder, and paprika. Continue cooking for 2 minutes, then remove the chicken from the pan.
  • Add the sliced onion, bell peppers, and minced garlic to the pan. Stir-fry for 3-4 minutes until the vegetables are crisp-tender.
  • Return the chicken to the skillet, seasoning with salt and pepper to taste.
  • Add the heavy cream and reserved pasta water, bringing the mixture to a simmer (this should take about 1-2 minutes).
  • Stir in the Parmesan cheese, then add the drained pasta. Toss to combine and adjust seasoning if necessary. Cook for another 2-3 minutes, allowing the pasta to absorb the creamy sauce.

Notes

Note: Cajun seasonings can vary in spice levels. Be sure to check the heat level of your seasoning before adding too much. While I love spicy food, this pasta recipe focuses more on flavor and savory notes rather than intense heat.
