4-6cupschopped leftover rib roastwith bones, or any other leftover roast
1teaspoonolive oil
1oniondiced
3ribs celerydiced
5carrotspeeled and sliced
4cupsspinachchopped
1cuptomato purée
2sprigs woodsy herbssuch as rosemary or thyme
6-8cupslow-sodium beef brothor water
Beef bouillon to taste
Salt and pepper to taste
1cupdry barley
Instructions
In a large soup pot, heat olive oil over medium heat. Add the chopped beef and brown for 5-7 minutes, stirring occasionally.
Add the diced onion, celery, and carrots to the pot. Cook for 2-3 minutes until the vegetables begin to soften.
