- 1/2 cup applesauce
- 1/4 cup Greek yogurt
- 1/4 cup molasses
- 1 tablespoon vanilla extract
- 1 cup coconut sugar or brown sugar
- 1 cup white sugar
- 2 eggs
- 1/4 cup olive oil
- 1 teaspoon cinnamon
- 1/2 teaspoon kosher salt
- 1 cup wheat bran
- 2 cups flour
- 2 teaspoons baking powder
Preheat oven to 350°F.
In a large mixing bowl, combine diced apple, applesauce, Greek yogurt, molasses, vanilla extract, coconut sugar, white sugar, eggs, and olive oil. Mix until smooth and well combined.
Add cinnamon, kosher salt, wheat bran, flour, and baking powder. Stir gently until the batter just comes together—do not overmix.
Line a muffin tin with paper liners and fill each cup about 3/4 full.
Bake for 30–40 minutes, until a toothpick inserted in the center comes out with moist crumbs.
Cool slightly on a rack, then serve warm with Greek yogurt or butter.
