Apple Bran Muffins

Ingredients
  

  • 1 apple diced
  • 1/2 cup applesauce
  • 1/4 cup Greek yogurt
  • 1/4 cup molasses
  • 1 tablespoon vanilla extract
  • 1 cup coconut sugar or brown sugar
  • 1 cup white sugar
  • 2 eggs
  • 1/4 cup olive oil
  • 1 teaspoon cinnamon
  • 1/2 teaspoon kosher salt
  • 1 cup wheat bran
  • 2 cups flour
  • 2 teaspoons baking powder

Instructions
 

  • Preheat oven to 350°F.
  • In a large mixing bowl, combine diced apple, applesauce, Greek yogurt, molasses, vanilla extract, coconut sugar, white sugar, eggs, and olive oil. Mix until smooth and well combined.
  • Add cinnamon, kosher salt, wheat bran, flour, and baking powder. Stir gently until the batter just comes together—do not overmix.
  • Line a muffin tin with paper liners and fill each cup about 3/4 full.
  • Bake for 30–40 minutes, until a toothpick inserted in the center comes out with moist crumbs.
  • Cool slightly on a rack, then serve warm with Greek yogurt or butter.
