Orange Cranberry Squeezed Juice Muffins

Bake time 20-25 minutes
Makes 12-14 jumbo muffins or 1 9×13 pan
Ingredients
2 1/4 cups flour
1 cup dried cranberries
2 cups sugar
2 tablespoons baking powder
3/4 teaspoon salt
1/2 cup melted butter
2 eggs
1 cup plain Greek or honey Greek yogurt
1 cup mandarin Squeezed Juice
1 tablespoon orange zest
1. Preheat oven to 400 degrees.
2. Fold flour and cranberries together in a large mixing bowl.
3. Add remaining ingredients and gently mix.
4. Line a jumbo muffin tin with liners or generously butter and flour the tin.
5. Scoop the batter into the pan, then top with 1/2 teaspoon sparkling sugar.
6. Bake 10 minutes, then lower the temperature to 350 degrees.
7. Continue baking 10-15 minutes.
8. Remove from the oven and enjoy!
