Whip up this Pomegranate Squeezed Juice Poke Cake for a fun summer backyard treat!

Makes one 9×13 cake

Chill time 4+ hours

Your favorite cake mix or scratch yellow/white cake, baked
1 6-ounce box of your favorite gelatin mix
1 11-ounce bottle of pomegranate Squeezed Juice
2 cups whipping cream
3 tablespoons sugar
Pinch of salt
1 16-ounce container of fresh strawberries or raspberries

  1. Bake the cake according to the recipe or package instructions. Cool the cake to room temperature.
  2. Boil 2 cups of water. In a medium mixing bowl add the gelatin powder. Add boiling water and mix until the powder is completely dissolved.
  3. Add the bottle of pomegranate Squeezed Juice to the gelatin mix. Stir to combine.
  4. Poke dozens of holes into the cake. Slowly pour the gelatin juice over the cake, starting in the middle.
  5. Chill the cake 4 hours at least, up to overnight.
  6. When it’s time to serve, prepare the whipped cream. In the bowl of your stand mixer or with a hand mixer, whip the heavy cream along with the sugar and salt until soft peaks form.
  7. Spread the whipped cream over the top of the chilled cake, then top with washed, sliced strawberries or raspberries.
