Serves 4

1 1/2 pounds ground beef
2 yellow onions, sliced
2 tablespoons olive oil
6 slices of your favorite cheese (I chose Monterey Jack)
12 slices of your favorite bread (I chose sourdough)
1 pound Chanterelle mushrooms (but any ‘shrooms work great)
1 clove garlic, crushed
2 sprigs woodsy herbs (I chose lemon thyme)
Salt and pepper to taste
Form 6 patties from the beef and get them frying over medium heat. In another skillet, caramelize onions in olive oil. This takes 15-20 minutes. Add cheese slice to each burger as they finish cooking. Toast up bread, then assemble your melts. Add burgers to bread, top with onions, and then sauté mushrooms and herbs in the burger pan. This takes about 5 minutes. Add garlic at the very end and cook 30 seconds. Season! Top the melts with the delicious mushrooms! This one is going into the fall rotation!
