We’ve all had our crust melt downs. Chewy, tough, greesy. Sometimes it’s the weather, sometimes it’s the way we are feeling that day. What if I told you there was a way to get dreamy pie crust EVERY time. Buttery, flakey, dreamy! It’d be like your southern Grandma was working through you helping you get to PERFECTION. Ok maybe you aren’t southern but deep down we all want to be. Swap this easy short bread recipe for any pie crust in any recipe and turn into everyone’s best friend.
Short Bread Pie
2 cups AP flour
1/2 cup granulated sugar
1 cup softened butter
1/2 tsp kosher salt
For The Filling
4 cups sweet ripe fruit (I used berries)
1/2 cup sugar
2 Tbsp. flour
In a mixing bowl combine all ingredients for the short bread. Mix until it just begins to come together, forming large clumps. Press 2/3 of the dough into a pie dish of your choice, making sure to come up the sides of the dish like traditional pie crust. Pre heat your oven to 350 degrees. In a separate mixing bowl combine sugar, fruit & flour. Gently pour fruit mixture into the pressed crust. Crumble remaining crust over the top of the fruit and bake for 40-45 minutes. If your crust begins to brown to much go ahead and tent with foil to finish baking.
