Roasted Idaho Potato Trees with Loads of Cheesy Snow. This post sponsored by the Idaho Potato Commission.

Prep time 15-20 minutes
Makes 12 trees
Serves 12

12 small-to-medium Idaho gold potatoes, peeled to a point on one end
12 food-safe bamboo skewers
3 tablespoons olive oil
Generous amount of salt and pepper
2 tablespoons salt-free seasoning blend

  1. Pre-heat oven to 350 degrees. Peel each potato and leave a point on one end. Slice a thin layer off the bottom so potato tree stands upright when skewered.  
  1. Slice each peeled potato and begin threading them, smallest slice first onto the bamboo skewer.  
  1. Scoot skewered potato slices down to the bottom of the skewer so that it stands upright.  
  1. Season liberally and drizzle with oil. 
  1. Bake on a parchment lined baking sheet 45 minutes.  
  1. To serve, crumble goat cheese snow along with herbs onto a platter. Place potato skewers on top of the goat cheese. Great parmesan snow liberally over the top. Serve warm. Enjoy!
