12 small-to-medium Idaho gold potatoes, peeled to a point on one end
12 food-safe bamboo skewers
3 tablespoons olive oil
Generous amount of salt and pepper
2 tablespoons salt-free seasoning blend
- Pre-heat oven to 350 degrees. Peel each potato and leave a point on one end. Slice a thin layer off the bottom so potato tree stands upright when skewered.
- Slice each peeled potato and begin threading them, smallest slice first onto the bamboo skewer.
- Scoot skewered potato slices down to the bottom of the skewer so that it stands upright.
- Season liberally and drizzle with oil.
- Bake on a parchment lined baking sheet 45 minutes.
- To serve, crumble goat cheese snow along with herbs onto a platter. Place potato skewers on top of the goat cheese. Great parmesan snow liberally over the top. Serve warm. Enjoy!
