Fresh tortilla chips & chunky guacamole with loads of lime and salt and cilantro and olive oil!  I know olive oil isn’t traditional but it’s just so lovely.  You’ll never go back to any guacamole recipe without it. This chunky green guacamole reminds me of a time I went to Playa Del Carmen for a month alone. I was 24- My parents were terrified and I rented a condo on the beach and went to restaurants alone and had table-side guacamole for the first time.  I bought pineapple spears with chili powder and ate those gorgeous pink Concha’s from a tiny bakery.  I bought tamales from street carts and It was a wild beautiful time. I came home and met Mike- Mexico holds this wild and lovely place in my heart.

Prep time 20 minutes

Yields a little over 1 quart

Ingredients

8 ripe avocados

Juice of 2-3 limes

1 bunch cilantro, chopped

1/2 cup finely chopped onion

1 big jalapeño, chopped (more if you like that heat)

1/4 cup extra virgin olive oil

Loads of kosher salt, to taste

1. In a large mixing bowl, mash avocados with lime juice until desired consistency. Some

people like a chunky guac and others prefer it smoother. Either works!

2. Add remaining ingredients and continue mixing.

3. Dunk warm chips and enjoy!
