I absolutely love to grill pizzas and flatbreads during the summer months.  I picked up a few staples, including pre-made pizza dough and California Avocados to grill! Ripe figs and creme fraiche make this flatbread really special.  Make sure you pick up California Avocados and throw them on the grill for an unexpected, delicious way to treat an avocado!   #californiaavocados #sponsored

Grilled Avocado & Fig Flatbread Pizza

Prep time 15 minutes

Cook time 15 minutes

Serves 2-4 people

 

Ingredients

1 16-ounce pre-made pizza dough

1 fresh California avocado

1/4 cup crème fraiche

1 cup arugula

3-4 ripe figs

1/4 cup Parmesan cheese

1 tablespoon olive oil

2 tablespoons balsamic vinegar

Salt and pepper to taste

 

Preheat your grill to 350 degrees F. Stretch your pizza crust by hand into a 12-14 inch oval shape. Lay the crust on the grill. After 2-3 minutes, your crust should be cooked enough to flip. Continue cooking and flipping about 7 more minutes to fully cook the crust. Watch for burning; the crust can burn easily on a grill hot spot before it’s done. Move the crust to a cooler area of the grill to cook the center. When the crust is about 3 minutes from finished, slice the avocado in half and remove the pit. Slice each half into 4 sections, skin on. Place the sections on the grill and cook 1-2 minutes per side.

To assemble the pizza, place the grilled crust on a large platter and spread crème fraiche over it. Slip the grilled avocado out of the skin and place on the crust. Sprinkle with arugula, top with sliced figs, Parmesan cheese, and drizzled olive oil and balsamic vinegar. Season with salt and pepper. Slice into squares and enjoy!

  1. After I load the crust with the assortment of goodies, I put the pizza back in the oven/grill for a few minutes…where the cheese melts and the other additions warm and present an even more lovely flavor. And the leftovers are great too…either cold or warmed.
