When the WA beef Commission and Fred Meyer stores came to us and asked for a super easy delicious recipe for a week night stir fry, I knew exactly what to do! I am a busy fulltime mom and I work outside the home, when everyone is hungry it happens fast! Some days you need to feed your family wholesome food that didn’t come from a box or drive through.
Ginger Beef with snow peas & bell peppers! This easy recipe comes together in the time it takes to cook your rice. Set a pot on to boil for your desired amount of cooked rice, then get started on this simple and healthy dinner the whole family can enjoy. My 5 year old Noah was all over this. Ginger Beef Stir Fry
serves 4
cook time 15 min
1lb your favorite steak, we chose sirloin
2 cups snow or snap pea pods
2 cups sliced red bell peppers
Sauce
2 tsp. grated fresh ginger
2 cloves crushed garlic
the juice and zest of one lime
1/4 cup tamari
1 tsp. brown sugar
2 tsp. cooking oil
dash of black pepper
Scallions & Sesame seeds for garnish
Heat a large skillet to high heat. Pour 1 tsp. of cooking oil into your pan, then add the thinly sliced steak. This will cook quickly, you want it to caramelize, but don’t want it to over cook. Once beef is cooked, about 4-5 minutes, remove and set aside. Add veggies to the pan with the sauce, the sauce will aid in steaming the veggies. Cook for about 2-4 minutes then add the beef back to coat with the sauce. To serve, spoon over steamed rice and garnish with scallions and sesame seeds!
