Makes 4-6 large waffles

Waffles

1 1/2 cups flour
1/2 cup corn meal
1/2 tsp. kosher salt
1/4 cup honey
2 eggs
2 cups buttermilk or half & half
2 Tbsp. melted butter

Maple Syrup

1 cup pure maple syrup
2 Tbsp. Sambal or Hot sauce

Crispy Chicken

1 lb. Chicken Tenders
5-7 tenders
1 cup flour
1 tsp. pepper
1 tsp. paprika
1 tsp. kosher salt
2 eggs
1/4 cup water

Preheat your oven to 350 degrees. In a large mixing bowl, whisk all the ingredients for the waffle batter and set aside. Preheat your waffle iron. Combine the maple syrup and hot sauce in a bowl and set aside.

To fry the chicken, set medium-sized mixing bowls out, place flour and seasonings in one and the egg and water in the other. Whisk the flour and then with a clean fork whisk the egg separately. Melt 2 Tbsp. of butter and 2 Tbsp. of oil in a large skillet over medium-high heat. While the oil heats, dredge the chicken tenders in the egg, then flour, dusting off excess, then back into the egg, and finishing in the flour for a double coating. Place the coated chicken tenders into the hot oil and fry for about 3 minutes per side. Don’t crowd your pan. The coating will fall off. Put the golden tenders onto a baking sheet and place in the oven.

While the chicken bakes, fry up your waffles! Place roughly 1/3-1/2 cup batter into the iron and cook according to your manufacturer’s suggestion. Once your chicken is cooked through place 2 pieces on top of your cooked, plated waffle, douse with spicy maple syrup, and enjoy!

Strawberry jam, soft butter, and hot pickles are also excellent accompaniments.
