Cozy, Creamy Mushroom Cavatelli Pasta

Prep time 20 minutes
Cook time 20 minutes
Serves 4

1 pound malfadine pasta
2 pounds assorted mushrooms
2-3 tablespoons olive oil
2 tablespoons garlic paste (to be demonstrated)
2-3 sprigs fresh lemon thyme leaves, stripped
2 sliced shallots
1/2 cup white wine
2 cups heavy cream
Pasta water to thin
1 cup parmesan cheese
Salt and pepper to taste

  1. Cook pasta according to the package instructions. Reserve 1 cup of the pasta water.  
  1. In a large skillet/sauté pan, heat olive oil and cleaned chopped mushrooms over medium high heat. Sauté until they release water and begin to caramelize.   
  1. Add shallots, garlic, and wine. Reduce heat to medium and season with salt, pepper, and chili flakes.   
  1. Continue to cook until wine has completely evaporated and shallots begin to caramelize, roughly 5 minutes.  
  1. Add heavy cream and parmesan cheese. Add half of the pasta, adding a bit of pasta water to thin the pasta sauce if necessary. Add remaining pasta. Add more cheese and salt and pepper to taste. Garnish with fresh chopped parsley.
