Cozy, Creamy Mushroom Cavatelli Pasta

Serves 4
1 pound malfadine pasta
2 pounds assorted mushrooms
2-3 tablespoons olive oil
2 tablespoons garlic paste (to be demonstrated)
2-3 sprigs fresh lemon thyme leaves, stripped
2 sliced shallots
1/2 cup white wine
2 cups heavy cream
Pasta water to thin
1 cup parmesan cheese
Salt and pepper to taste
- Cook pasta according to the package instructions. Reserve 1 cup of the pasta water.
- In a large skillet/sauté pan, heat olive oil and cleaned chopped mushrooms over medium high heat. Sauté until they release water and begin to caramelize.
- Add shallots, garlic, and wine. Reduce heat to medium and season with salt, pepper, and chili flakes.
- Continue to cook until wine has completely evaporated and shallots begin to caramelize, roughly 5 minutes.
- Add heavy cream and parmesan cheese. Add half of the pasta, adding a bit of pasta water to thin the pasta sauce if necessary. Add remaining pasta. Add more cheese and salt and pepper to taste. Garnish with fresh chopped parsley.
