Here is the 3rd and final installment of our healthy gorgeous soups for 425 magazine! This recipe is from My book Rustic Joyful Food, its just such a beautiful hearty dish that your family may have no clue that its so good for them! This dish was inspired by my sister Jenny, she serves the most delicious soups and her version has orzo pasta, feel free to add a short pasta if you wish! For those of you in that whole 30 swing, simply omit the shaved parm. Enjoy!
CHICKEN SAUSAGE SWEET POTATO STEW
1 1-lb. package mild chicken sausage, out of the casing
2 Tbsp. olive oil
2 white-flesh sweet potatoes, diced
1 medium yellow onion, diced
2 carrots, sliced
1 bunch dinosaur kale diced
¼ tsp. crushed red pepper flakes
½ tsp. black pepper
1 Tbsp. kosher salt
2 cloves fresh garlic, crushed
1 15-oz. can diced tomatoes
4 cups unsalted chicken stock
Lemon wedges and parsley for garnish
In a large soup pot, brown the meat in olive oil over medium-high heat. Once the meat is cooked, add all the fresh veggies (but not the canned tomatoes) and seasonings. Cook for about 3 or 4 minutes. Add garlic, then the tomatoes and stock. Bring to a boil, then reduce heat to medium/ low for 1 hour or until the potatoes are fork-tender. Top with shredded parmesan or a squeeze of fresh lemon juice for brightness.
