Ingredients
  

  • 1 package 1 lb. mild chicken sausage, out of the casing
  • 2 tablespoons olive oil
  • 2 white-flesh sweet potatoes diced
  • 1 medium yellow onion diced
  • 2 carrots sliced
  • 1 bunch dinosaur kale diced
  • ¼ teaspoon crushed red pepper flakes
  • ½ teaspoon black pepper
  • 1 tablespoon kosher salt
  • 2 cloves fresh garlic crushed
  • 1 15-ounce can diced tomatoes
  • 4 cups unsalted chicken stock
  • Lemon wedges for garnish
  • Fresh parsley for garnish

Instructions
 

  • In a large soup pot, heat olive oil over medium-high heat. Brown the chicken sausage, breaking it apart as it cooks.
  • Once the sausage is browned, add the diced sweet potatoes, onion, carrots, kale, crushed red pepper flakes, black pepper, and kosher salt. Cook for about 3-4 minutes, stirring occasionally.
  • Add the crushed garlic and cook for an additional minute until fragrant.
  • Stir in the diced tomatoes (with juice) and chicken stock. Bring the mixture to a boil, then reduce the heat to medium/low and simmer for 1 hour, or until the potatoes are fork-tender.
  • Garnish with lemon wedges and freshly chopped parsley before serving. Enjoy!
