It’s summertime! Berry season! And I’m continuing my series with Albert Lee Appliance featuring Electrolux!
I made a quick and delicious icebox cake to beat the heat and keep the oven off, and you’re gonna want to bookmark this one! One of my favorite features of the Electrolux refrigerator is that its LuxCool Cooling System moves cold air throughout the fridge to maintain optimal freshness in your food! Another great feature are the TasteLock Plus Crispers with Auto-Humidity Control. Strawberry Icebox Cake
Prep time 20 minutes
Inactive time 6-24 hours
Makes 1 9×13 pan
Ingredients
8 ounces softened cream cheese
1 1/2 cups powdered sugar
crackers
4 cups heavy whipping cream
1/4 teaspoon salt
1 teaspoon vanilla extract
1/2 teaspoon ground cinnamon
1 14-ounce box of cinnamon graham
1 16-ounce container of strawberries sliced (roughly 3 cups)
- In a stand mixer with paddle attachment, or the work bowl of your food processor, whip cream cheese and powdered sugar until creamy and smooth.
- Slowly add whipping cream 1 cup at a time and scrape down the sides of the bowl to avoid lumps. Add salt, vanilla, and cinnamon.
- Whip cream to achieve medium peaks and a texture that does not fold back onto itself.
- Next, line the bottom of your pan with graham crackers. Break them to fit along edges if necessary.
- Spread a third of the whipped cream mixture over the crackers, then repeat 2 more times, ending with cream.
- Cover and chill 6 hours. Overnight is best.
- When ready to serve, top with sliced strawberries or any fresh berries you have on hand! Enjoy!
