Main & Vine is this amazing little store in the heart of Gig Harbor, Washington, and Michael and I adore working with them. They opened about a year ago and are ready to welcome their millionth customer!
In honor of summer, sweet treats, and everything that’s fun and delicious I’ve come up with an easy spin on Bananas Foster! You can make this decadent caramel toffee sauce on the grill in your cast iron pan or on the stove top, if it’s not too hot. Rich, tangy toffee sauce and bananas should be on everyone’s perfect sundae wish list this summer.
Bananas Foster Sundaes
Serves 4
Prep time 5 minutes
Cook time 7-9 minutes
3 ripe bananas with no spotting
2 tbsp. butter
1 1/2 cups dark brown sugar
3/4 cup heavy cream
Pinch of salt
Simple truth Vanilla ice cream
Rainier cherries for the perfect sundae topper
In a heavy bottom skillet, like cast iron, melt butter over medium heat and add half the bananas. Sauté bananas briefly and add the dark brown sugar. Stir in heavy cream. As the sugar begins to melt and the bananas begin to fall apart you will see the toffee sauce start to come together. Once the sugar has melted completely, add the remaining bananas. This adds a great textural component as well as some banana slices that will hold their shape. Simmer in the toffee sauce for 1-2 minutes. Remove from heat.
Place two scoops of vanilla ice cream into a bowl and top with warm caramel banana sauce. Top with a rainier cherry, and you’re in for quite the treat!
