Pumpkin Triple Chip Cookies

Inactive chilling time 30 minutes
Makes about 12-14 1-ounce cookies

Ingredients

1 cup melted butter
1 cup packed dark brown sugar
1 cup white sugar
1/3 cup pumpkin puree
1 egg
3 cups flour
1 teaspoon ground cinnamon
1/2 tablespoon flaky salt
1 cup milk chips
1 cup white chocolate chips
1/2 cup mini dark chocolate chips

Directions

  1. Preheat oven to 375 degrees. In a large mixing bowl, mix butter, sugars, pumpkin, and egg.
  2. Dump in flour, cinnamon, and salt. Mix halfway, then add all chocolate chips.
  3. Mix until batter just comes together, careful not to overmix. Chill 30 minutes in refrigerator. 
  4. After chilling, bake 1-ounce scoops (golf ball-sized) on a lined baking sheet 12-14 minutes.
  5. Cool slightly and enjoy with a big glass of milk!
