Cilantro & Mandarin Marinated Shrimp Tacos

Tacos happen to be my all-time favorite summer food. In fact, I think a taco might be my all-time favorite food for all year long! I thought it would be delicious and creative to use mandarin Squeezed Juice as the base for this cilantro & mandarin marinated shrimp taco! It was an absolute masterpiece! It’s all the things we love: heat, citrus, garlic, and just so tasty! Find some @squeezedjuice fresh pressed, 100% mandarin juice and get cooking!
1 1/2 pounds of your favorite shrimp (we used Argentinian red shrimp)
1 cup mandarin Squeezed Juice
1/2 teaspoon Aleppo pepper
1 teaspoon paprika
3 cloves garlic, minced
1/2 cup chopped cilantro
2 tablespoons olive oil
Salt and pepper to taste
12 corn tortillas
1 cup chopped cilantro
1/2 white onion, finely diced and rinsed
1 cup prepared jalapeño sauce (we used Trader Joe’s brand)
2 limes, sliced
- In a large bowl add the shrimp, mandarin juice, paprika, garlic, cilantro, olive oil, salt, and pepper. Mix to combine and set aside.
- Heat a skillet over medium-high heat and add the shrimp mixture to the hot pan. You do not want all the liquid from the marinade in the shrimp pan; about half is perfect.
- Cook the shrimp 3-4 minutes in the simmering marinade until the shrimp is opaque and cooked through.
- Once the shrimp is cooked, I like to clean the pan and then drizzle olive oil into the pan to fry up the corn tortillas, 2-3 minutes over medium-high heat.
- Chop the onion and cilantro, then assemble the tacos. Add 2-3 shrimp (cutting the shrimp in half really stretches them) per taco, then top with onions, cilantro, jalapeño sauce, and lime. Enjoy!
