It’s football season, and we want fast, easy, delicious appetizers! I used Louis Kemp Crab Delights® to make these cheesy quesadillas with chunky poblano salsa, and my family quickly devoured them! I have to be honest, you guys, when I bought my first house I was only 21, and the FIRST THING I BOUGHT was a package of imitation crab. Every time I opened the refrigerator door I felt so fancy! Preparing this dish, it was really fun to reminisce about my fancy food days. Serves 4-6 people
Makes 4 quesadillas

Chunky Poblano Salsa
1 medium-sized diced poblano, pepper ribs and seeds removed
1/4 cup red onion, finely chopped
1 clove of garlic, minced
6 medium-sized hot house tomatoes
1/2 cup chopped cilantro
2 Tbsp. olive oil
Juice of a lime
Salt and pepper to taste
Avocado (optional garnish)
Sour cream (optional garnish)
Crab Quesadilla
8 flour tortillas
1 package Louis Kemp Crab Delights®, drained
2 cups shredded cheddar cheese
1/2 cup chopped green onions
In a medium-sized mixing bowl, combine all ingredients for the chunky poblano salsa. Set aside.
Heat a non-stick skillet over medium heat, place a tortilla in the pan, and break up 1/4 of the package of Crab Delights® onto the tortilla. Cover with 1/2 cup shredded cheddar cheese and sprinkle 2 Tbsp. of the green onions over the cheese. Place another tortilla on top and cook for 2-3 minutes until the cheese begins to melt and the bottom of the tortilla is golden brown. Flip the quesadilla and brown it for 2-3 minutes on the opposite side. Remove from the pan and allow to cool slightly. Slice the tortilla into 4 wedges. Repeat the quesadilla making process 3 more times. Top with salsa, avocado, and sour cream.
