OH—and make these truffles! I mean, they’re chocolate, covered in goodness, and it’s Valentine’s Day this month. Just look at the photo below and try to resist! They’re AMAZING!
Chocolate Truffles
Makes 48 truffles
Prep time 15 minutes
Inactive chill time 60 minutes+
1 1/2 cups heavy whipping cream
24 ounces good quality bittersweet chocolate, finely chopped or milk chocolate (your favorite chocolate chips work great)
1-2 tablespoons Kahlua, or your favorite liqueur (optional)
1/4 teaspoon kosher salt
1 tablespoon vanilla extract
2 cups unsweetened cocoa powder
2 teaspoons instant espresso powder
Heat cream in a medium-sized saucepan over medium-low to low heat until it begins to
simmer but not boil. Pour over chocolate in a heat-proof bowl. Stir until chocolate is melted.
Add Kahlua, salt, and vanilla. Mix and refrigerate. It can take up to 4 hours to achieve optimum firmness. Once ganache is
firm, roll into teaspoon-sized balls. Place cocoa powder and espresso into a large, shallow bowl. Using two
forks, roll truffle into the powder until completely covered, then transfer truffle to a baking
sheet covered in parchment or wax paper. If making the truffles a day or two ahead of time, let
them stand at room temperature for at least one hour before serving.
Variations:
• To make coconut truffles, substitute two teaspoons coconut extract for Kahlua and roll finished truffles into unsweetened coconut flakes.
• To make pistachio orange dark chocolate truffles, substitute two tablespoons Grand Marnier for Kahlua and add 1 tablespoon orange zest to chocolate mixture. Roll finished truffles in finely chopped pistachios.
• To make dark chocolate chili truffles, simmer one habanero pepper, with a slit in the flesh of the pepper, in the heavy cream. Remove the pepper before adding the cream to the chocolate.
• Omit the coffee liqueur and espresso powder from the master recipe.
• Feel free to roll the milk chocolate variation in sprinkles.

I highly recommend combining pistachio and lime.
